Mulled Hot Chocolate Mood Booster
Myself, Brendyn (husband) and a friend of ours (Tristan) are held up in the country for the next few weeks.
The boys have recently returned from the Philippiness, where they recorded an album with a local Filipino artist called Keiko Necesario. They're now in the mixing stage and using the isolation time to get the album finished.
They're working really long hours at the moment while my own work has slowed right down, so I've been doing the cooking and some baking to boost morale.
I made some drinking chocolate for dessert one night - coconut cream, a few blocks of Tesco's dark chocolate (85%), 2 cups of milk, maple syrup, a dash of salt, vanilla essence and a tablespoon or two of cornflour for thickening. We drank it hot, right off the stove. Simple, but I can't describe how good it made us feel.
This week I'd like to try it again, but perhaps a more boozy variation. I found this recipe for 'mulled hot chocolate' from Olive Magazine and one day soon, when this is all over, I swear I will make this for all of you...
300 ml red wine
1 cinnamon stick
2 star anise
4 cloves
6 allspice berries
2 tbsp demerara sugar
500 ml whole milk
150 g dark chocolate chips or dark chocolate
Method
STEP 1
Pour the red wine into a pan and add the cinnamon stick, star anise, cloves, allspice berries and demerara sugar. Heat gently and simmer for 10 minutes.
STEP 2
In a separate pan, heat the milk, then gradually whisk in the dark chocolate. Strain the red wine into the chocolate pan and stir.
STEP 3
Serve in small glasses or cups with extra cinnamon stick stirrers.
